Sundays are food prep days in my house and every once in a while I have some leftovers from the week before that I need to get creative with.
This week it was bananas. What says Fall more than a Pumpkin Banana bread (oh… and it’s made with protein). This is the perfect mid-day or pre-workout snack.

Pumpkin Banana Protein Bread:
-1 cup of vanilla protein (or if you don’t usually have protein on hand, whole wheat flour or oat flour would work)
-1/2 cup whole wheat flour
-1/3 cup of oats (I used quick steel cut oats)
-1/8 cup brown sugar
-1 tsp cinnamon
-1 banana
-3/4 cup of pumpkin (canned)
-1 egg (with yolk)
-1 tsp vanilla
-1/4 tsp salt
Extras: I tossed in some dried cranberries, walnuts, and pumpkin seeds
Pre-heat oven to 450 degrees. Mix all ingredients together (putting any extras in last). smooth into bread pan and bake for 30 minutes
