Protein Packed Oatmeal Cookies

Today is National Oatmeal Cookie Day and seeing that I am absolutely obsessed with oatmeal it has to be one of the BEST days of the year. The only thing that could top today is if was National Ice Cream Day (July 20th I have my eyes on you), OR if my hair was long again (ayi yi yi).

Ok – so these protein packed treats are absolutely AMAZING! When it comes to cookies and sweets – the struggle is real people. I can hardly walk into a coffee shop without pressing my face to the glass and drooling over any sugary treat inside. What’s good about these oatmeal cookies are that they don’t include any additional sugar AND all of the ingredients are natural (and you can likely find them right in your cupboard). Did I also mention that they are AMAZING (ok – I just had to reiterate).

They are super easy to make and even though they include “protein powder” I’m sure you can substitute flour or something else if you really want…

Ingredients:
1 1/4 cups old fashioned oats
1/4 cup sweetened shredded coconut (you can use unsweetened as well)
1/4 cup of vanilla protein powder (I use Pride Nutrition Iso Whey)
1 tablespoon pumpkin seeds
1 1/2 teaspoons cinnamon
1/2 teaspoon sea salt (don’t skip this ingredient – really makes a difference)
1/2 cup raisins (you can add something else if you like – chocolate chips)
2 bananas
1/4 cup natural applesauce
1/4 cup melted coconut oil

Directions:
1. Pre-heat your oven to 350 degrees and line baking sheet with parchment paper or spray with a non-stick spray (this is what I did)
2. Mix the first 6 ingredients together, then fold in the raisins
3. In a separate bowl, mash the 2 bananas, mix in the applesauce and melted coconut oil
4. Pour wet ingredients over dry ingredients and mix together
5. Form cookie balls with your hands and gently press down on pan to make shape of cookie (don’t flatten all the way)
6. Cook for 18 minutes
7. Use spatula to loosen cookie from baking sheet and determine if they need to be cooked a little while longer (I put mine in for 3 more minutes)
8. Gobble down your treats 🙂
