Lately it’s been quite a rush for me to get out the door in the morning. My alarm goes off and I find myself hitting the snooze button one, two, then three times. Maybe it’s because even the sun has yet to wake up at 5:30…
The one thing that I used to love about the mornings was my breakfast time. I would cherish those few minutes when I would scarf down my eggs and oatmeal, snuggling on my couch and thinking about my day ahead. Those few minutes have since been replaced by me awkwardly jumping up and down into my workout leggings and begging my dogs to go to the bathroom quicker. Oh and breakfast? That really hasn’t been happening until after I train my first two clients in the morning. This week I finally decided I needed a better solution.
One of my clients told me that she has been making these really delicious banana chocolate chip muffins and I remembered that I had made something similar a while back. I decided to dig through my archives and saved recipes when I came across this post by The Ambitious Kitchen. They had everything I was looking for – a quick morning meal with a little bit of fiber, protein, and complex carb. Plus anything with chocolate and I’m sold. I used oats in my recipe instead of flour since I always have oats on hand and I also put in a little bit of sea salt. I can envision throwing in walnuts or raisins or other yummy add-ins too! The zucchini helps to keep these little gems moist while adding in some nutrients and I promise you can’t taste it (does zucchini really have a taste anyway!?)
As always, my husband is my first line of taste testing and within one bite he fell to the ground and yelled out “these are the best things you’ve ever made!!!” 12 came out of the batch and we only have 4 left….
