Beans and Chocolate? Yep!
I thought of this amazing concoction after having practically zero groceries in my house Sunday morning. I wanted to still stick within my macros and not venture outside my house yet, so I thought – whatever, I’ve tried worse. Surprisingly, these were decadent, fluffy, and a real treat to round out my weekend. You cannot taste the beans and if anything, they help make the pancakes moist (while adding the right amount of complex carbs and protein to your diet).

Black Bean Chocolate Protein Pancakes
1 scoop chocolate protein (I use Pride nutrition protein – you can buy it here)
1 cup low sodium black beans (drained)
1/3 cup of egg whites
1 tablespoon cocoa powder
1 tablespoon almond milk or water (I used water – remember… no groceries) 🙂
almonds chopped up
1/2 tablespoon agave drizzled on top
chocolate protein powder mixed with water used as “syrup” – should be a thick consistency
Blend all ingredients together, grease pan (I like EVOO), pour mixture into pan. When bottom gets brown – FLIP!
Should make two medium sized pancakes!
