To kick off my heart healthy series – I present you with these delicious and nutritious blueberry lemon muffins. I tried to make these last week and the lemon flavor was barely present and they were a little bitter (believe me I still ate them… there’s nothing that almond butter cannot fix).
This time around, I concentrated more on the lemon flavor instead of the blueberry – and WHALA – I was left with a super moist lemony blueberry muffin.
I love these as a quick morning bite with my cup of coffee. Not only do they have a decent amount of protein, but they also have 4g of fiber. Plus, they’re low fat!
