Energy Breakfast Toast


Breakfast is my favorite meal, I can literally eat breakfast no matter what time of day it is. I will admit I am kind of a creature of habit. I love my morning omelette and oats. Some days I’ll mix up my morning routine with a veggie scrambler or protein pancakes topped with almond butter. But this year, I am really trying to shake up my diet and try new things.

I decided to experiment with some toast recipes. I really think that toast gets a bad rap – after all its all carbs with no protein… or is it!? I wanted to come up with a few quick and easy options that were delicious and would also hold me over until lunch.  Once I started experimenting, I quickly realized that the options were endless (and HEALTHY)!!!

If you are going to try incorporating toast into your morning routine, I suggest heading to your freezer aisle to pick up ezekiel bread. I switched from regular white bread to ezekiel bread about 4 years ago since there’s less processing and more whole nutrients. Your grocery store should have this in stock – but remember – look in the freezer! You can literally leave this bread frozen for as long as you want and when you need a piece, just throw it in the toaster frozen. I do it all the time! No need to let the whole loaf de-thaw.

Breakfast Toast Ideas
INGREDIENTS:

1/3 avocado
Juice from 1/4 lemon
2 thin slices of smoked salmon
Dash of red pepper flakes
Ezekiel Toast

DIRECTIONS: 
1. Remove bread from freezer and toast one slice until browned.
2. While the toast is cooking, place sliced avocado in a small bowl and combine lemon juice. Mix until avocado is smooth.
3. Remove toast from toaster and spread avocado mixture on top.
4. Sprinkle a few dashes of red pepper flakes and top with smoked salmon.


Energy Breakfast Toast

Breakfast Ideas
INGREDIENTS: 

1 slice of pepper jack cheese
1/2 C egg whites
1 T cream cheese
1/2 small tomato
Ezekiel Bread

DIRECTIONS: 
1. Remove bread from freezer and toast one slice until browned.
2. While the toast is cooking, scramble egg whites in a pan.
3. Top toasted bread with cream cheese and eggs.
4. Cover eggs with pepper jack cheese and diced tomatoes. 


Banana energy breakfast toastBanana Energy Breakfast Toast
INGREDIENTS:

1 T almond butter
1/3 Medium banana
1/2 tsp Chia seeds
Ezekiel Bread

DIRECTIONS: 
1. Remove bread from freezer and toast one slice until browned.
2. While the toast is cooking, mix chia seeds in a small bowl with 2 tsp of water (should form a gel consistency)
3. Spread almond butter on top of toast and then top with chia seeds.

4. Cover almond butter chia seed spread with sliced bananas. 


Honey energy breakfast toastApple energy breakfast toast
INGREDIENTS:

1/2 tsp honey
1/4 Apple
1 T non-fat plain greek yogurt
Dash of cinnamon
Ezekiel Bread

DIRECTIONS: 
1. Remove bread from freezer and toast one slice until browned.
2. Cover toast with greek yogurt.
3. Layer sliced apples on top of greek yogurt and sprinkle on cinnamon.
4. Drizzle honey over top. 


Fried Egg Energy Toast BreakfastFried Egg energy toast
INGREDIENTS: 

1/2 Oz flavored goat cheese (I used apricot)
1 Egg
1 Medium radish
5 Spinach leaves
Ezekiel Toast

DIRECTIONS: 
1. Remove bread from freezer and toast one slice until browned.
2. While the toast is cooking, fry egg in a pan.
3. Top toast with goat cheese spread and spinach leaves.

4. Slice radish and place on top of spinach. Place egg on top.
